So right now I have my static websites hosted on AWS (Route 53 > Cloudfront > S3) and it works pretty well. Now I have some other landing pages that require PHP and I would need to host them too, but it's impossible without an EC2 instance. So I would like to know your opinion...

Well, years ago I was programming in C. But now I'm focused on web-development:
HTML (which is not a programming language but a markup one)
CSS (style sheet language)
JS
jQuery (even if in fact is not a programming language)
SQL
I also know a bit of VB and Python.
Personally, I use Sublime Text.
I recommend you that before choosing one, you should know what you expect from and after, test multiple code editors and choose the most suited to your requirements.
