When doing your keywords in the head content do you put a dash - or comma , in between words or does it make a difference
 
I'm not sure it matters. But best not to use either unless necessary.
But you aren't talking all words right?
Just to separate 2 phrases like: Search Engine Marketing - Best SEO Resources
 
yes the words in between targeted key words

for example

UFC 81 Frank Mir Brock Lesner Mixed Martial Arts


now for my title which is better

UFC 81, Frank Mir, Brock Lesner, Mixed Martial Arts

or

UFC 81 - Frank Mir - Brock Lesner - Mixed Martial Arts
 
Well for a title tag this is pretty long and not sure how related the terms are.

UFC 81, Frank Mir, Brock Lesner, Mixed Martial Arts

Typically you'd be much better off having a page targeting each one
separately with only the 2 word phrase or an expansion of it in the title.

If you are talking about the title tags then it really doesn't matter "too" much... just keep it natural looking and focused/relevant

If you are talking about the Keyword tags then Google pretty much ignores it although other SE's may place some weight there.
