It seems to be the way things are going, simpler, easier to use, mobile friendly.
For starting a project I recommend the Material UI CSS library as it has a lot of components built in.
I'm not a big fan of flat, myself. I have seen the odd site that I thought it looked good on but mostly, it makes think of 1999.
That said, I think it suits some types of sites but for some others, it really does not. A flat site for a MMOG, for example, would just not fit. At all.
