Can you imagine doing all of that for every affiliate per request?
This is why s2s needs to be programed server to server.
The programming per affiliate would be by API token authorization and some other factor (server IP maybe) that's not that complex to add.
But on the affiliate end this would require programming --most can't
Tracker SaaS platforms (tools) have on staff developers to do this.
So pay the monthly cost for a tracker or hire your own developer (thousands) ...
Yes, It is possible. Set the goal in google analytics then you can track the conversion.

Yes. It's absolutely possible; even easier now with GA4.

Yes that's what I Figured so now I'm trying to get the tracker settings to work. But a little confused with the S2S Postback so I made another thread here.

We can track conversions in GA4. With google tag manager it is much easier. If anyone wants to track their traffic and conversions with the help of an app, it is possible now. The GTM Assistant is a free application available on Shopify App Store. It can be used to easily install GA4. It also supports Meta remarketing pixels.
